Absolutely Excellent Banana Bread
Apr. 10th, 2009 09:44 amDepending on your recipe, banana bread can be quite dense sometimes. This stuff is light and fluffy and ohsogood.
I made muffins with it (although I'm closer to calling them cupcakes) but I got the recipe after trying a loaf my mother had made.
1/2 c of shortening
1 c white sugar
creamed together, then add
2 eggs
1 tsp vanilla
Sift together
2 c of flour
2 tsp baking powder
1/4 tsp soda
1/2 tsp salt
Stir into butter, then add
2 tablespoons milk
1 cup mashed bananas
Nuts if you want to.
loaf pan - 45 mins to an hour @ 350 degrees

They smell really yummy.
I have four loads of laundry to fold, and two more on the go. Tomorrow my mother is bringing over suitcases so I can start packing for Vegas.
I don't have enough time. Ever. But it's exceptionally crunchish right now.
Curry for dinner tonight, I think. I have chicken thighs to use up.

Lime Chicken Thighs
Ingredients
1 tablespoon minced garlic
1 1/2 teaspoons ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons fresh lime juice, divided
4 (6-ounce) chicken thighs, skinned
3 tablespoons fat-free, less-sodium chicken broth
1 tablespoon white vinegar
2 teaspoons chopped fresh cilantro
2 lime wedges
Preparation
Preheat oven to 350°.
Combine first 5 ingredients in a small bowl; stir in 1 tablespoon juice. Rub garlic mixture over chicken. Place chicken in a medium skillet.
Combine 1 tablespoon juice, chicken broth, and vinegar; pour over the chicken. Place over medium-high heat; bring to a boil. Remove from heat. Wrap handle of pan with foil. Cover and bake at 350° for 30 minutes or until a meat thermometer registers 180°.
Remove chicken from pan; keep warm. Place pan over medium-high heat. Bring to a boil, and cook until reduced to 1/4 cup (about 3 minutes). Spoon over chicken. Sprinkle with cilantro, and serve with lime wedges.
